Got accepted to the dinner late - the Women’s Dinner is usually oversubscribed, forgot to tell them my dietary requirements, but am pleasantly surprised that the organiser remembered that I’m trying my hardest to be vegetarian. 🤩sandwiches así de fáciles son lo mejor, sobretodo cuando tenemos poco tiempo para almorzar o desayunar. Para que sea más rápido de preparar lo primero que hago es meter el pan al horno 10 minutos, mientras tuesta voy cocinando las verduras y picando o buscando los demás ingredientes para ya tenerlos listos. Así cuando el pan ya está tostado solo hay que poner todos los ingredientes en el pan. Otra cosa que hago es saltear muchos champiñones o verduras y meterlos a la refri en un taper, así solo los tengo que calentar y ya están listos para comer con lo que haya: pan, arroz, ensaladas, papas fritas, etc. ✨para prepararlo: -Tostar un pan pita 10 minutos a 120 grados en un hornito -Calentar aceite de oliva en una sartén a fuego medio y saltear dos puñados de champiñones picados hasta que estén dorados y suaves, echar una cucharadita de ajo picado y media de sal, dorar un poquito el ajo y sacar del fuego. -Cortar el pan por la mitad y esparcir mostaza, poner la lechuga, el tomate, los champiñones salteados, cebolla roja y arúgula y lisssssto💛

I never thought the description "spicy and numbing" could equate to such joy. • @xianbiangbiangnoodles smacking our faces with all kinds of good stuff. Particular highlights were the tofu skin salad, maddeningly zesty and critic, without utilising any such fruit; the black fungus with coriander - because black fungus; and the noodle - oh the noodle. Me and the noodle really got on. The broth too. It was a happy affair.

* Spaghetti Squash* EASY & full of flavor! I roasted the squash at 400° for an hour with water in the pan to create steam. I let it cool for a while after taking it out of the oven. Heat up olive oil in a pan. Toss in grape tomatoes, kosher salt, chopped garlic, & handful of parsley. Wait for tomatoes to burst, about 7 minutes. With a fork pull the flesh from the squash & you have noodles!
