110/200 - The Gambia 🇬🇲 We’re now 55% of the way through our cooking quest! And yes, you read the country name right, as “The” is part of the name. The Gambia is the smallest country within mainland Africa and here’s what I made from it...
1. Spicy Chicken ‘Pepe’ Soup. This was a soup made with chicken, tomato paste, Maggi cubes, garlic, and A LOT of peppers...peppercorns plus three different types of fresh peppers AND a pepper sauce from Africa. I also added peas and carrots. We knew this would be very hot and so it was! But it was the type of spicy hot that you can still enjoy🔥
2. Tapalapa. Here I gave a try at making African baguettes. There were four types of flour used, including cowpea flour from Africa. Once the dough was ready, I made three baguette loaves. It was a little dry on the inside but was nice dipping into the soup just as they do in The Gambia. Plus, tapalapa is another word that’s fun to say.
