Ingredients (for 2 servings) - 2 salmon fillets - ¼ cup olive oil (60 mL) - salt, to taste - pepper, to taste - 1 lemon, juiced - 2 lemons, sliced - 2 cloves garlic, minced - 3 sprigs fresh rosemary - 1 sprig fresh thyme - 1 lb asparagus (455 g) GARNISH - fresh parsley, to garnish . Preparation 1. In a resealable bag or dish, add salmon, olive oil, salt, pepper, juice of one lemon, minced garlic, one thyme sprig, and one rosemary sprig. 2. Seal, mix marinade around, being careful not to bruise the fish, and allow to marinate in the refrigerator for at least one hour. 3. Preheat only half of the grill to medium-high heat for indirect grilling. 4. Slice the two remaining lemons horizontally, so that you get six slices of lemon from each one, excluding the top and bottom. 5. Bend each piece of asparagus until the woody end snaps off and discard it. 6. Oil the grill with olive oil and place lemon slices over indirect heat (the side of the grill where the burners are not on). 7. Lay salmon on top of the lemon slices and top with a sprig of rosemary on each fillet. Close the cover and grill for 20 minutes. 8. Place the asparagus spears on the grill and brush with olive oil. Grill for 5 additional minutes. 9. Sprinkle with parsley and serve. 10. Enjoy! 💕

This is a bit long--I hope you stick with me to the end: I have a very vivid and specific memory from the first time I traveled to the Pacific Northwest. I'd been on the road for weeks on tour with my band and we were finally reaching the west coast exhausted, broke, and pretty smelly. I watched from the window of our van as dust devils spun across the rolling wheat fields of the Palouse Prairie under a hazy blue sky. Everything was gold and bright like only September is. Suddenly, my eye caught a smear of brilliant white on the western horizon. I remember catching my breath a bit as the hulking mass of Mt. Rainier slowly unraveled above the dusty plains in front of me--a beacon signaling our arrival in what I would soon discover is a lush wonderland pinned against a raging coastline at the end of the world. That was twelve years ago. I've lived in Seattle for seven of those years now and can't count how many times Mt. Rainier has repeated her revealing act for me. It seems that no matter where I am in Washington The Mountain will appear around a corner or over a ridge line or, at last, through a sunny gap in the omnipresent Seattle gloom and prove itself once again the indelible icon of the PNW. The experience is always profound. I've been revisiting this concept a lot over the past weeks as our world has seemingly turned upside-down. Nothing feels normal right now in this time of global crisis. We're being asked to do things we never dreamed we'd have to do to help protect not just ourselves, our friends, and our families, but total strangers and our very way of life. I know, for me, battling anxiety and fear is a daily struggle. As such, I've been looking everywhere I can for beacons all around me: beacons of hope that this won't last forever; beacons of love not just for those around us; beacons of strength and support to uphold communities; beacons of selflessness from medical and essential workers who are putting themselves at risk to help others; beacons of creativity bursting out of dark and silent places.
